So a few weekends back, I wanted to make a dish for a little celebratory 'Hajj party' I was going to, and decided this would be it. Noodles are usually always a favourite amongst all people and cultures and its simplicity along with the ease of making the large quantity needed fit perfectly the occasion I was going to.
Enough said, here is how I made it...
Ingredients needed:
2 packets (8 portions) of dried Egg Noodles
1 large Chicken breast (1 1/2 cups boneless chicken) cut into very small cubes
2 medium Carrots, cut into small matchsticks
1 Green Pepper (any colour will do), sliced
1 Onion, sliced thickly
5 Spring Onions (green Onions), roughly chopped
2/3 tbls Tomato Ketchup
Oil (vegetable or Olive Oil)
For the Paste:
(a blender or liquidizer will be needed here. If not, a grater can be used to make this paste)
5 small onions (about 2 large)
8 Garlic cloves
1/2 tsp chilli powder
1 heaped tsp Salt
How to make:
1. Begin by making the paste. Place all the ingredients for the paste into a blender, or food processor (or grate everything) and blend till a smooth consistency.
2. Meanwhile, heat about 4 tbls Oil in a large frying pan and cook chicken on a High heat till golden.
3. Pour the paste into the pan with the chicken and cook on a medium heat till the paste thickens and turns a golden colour. You may want to taste to check that the bitterness from the garlic has gone.
4. Add all the prepared vegetables (apart from the Spring Onions) and stir fry for 5 minutes. Water can be added, about 1/2 cup of water, to thin the paste if it has become very thick and sticky. Add the ketchup and stir through.
5. Meanwhile, prepare the noodles according to the packet instructions.
6. Finally, stir the noodles into chicken and vegetables and add the Spring Onions. Heat through gently before serving. You can garnish the noodles with a sprinkling of freshly chopped Spring Onions and fresh Coriander, if available.
