Day of the Cupcake & Dessert Stall

A weeks worth of headache, preparation, lack of sleep, list writing, shopping trips, trial 'n' error, mess, tears & laughter all ended yesturday!
I can safely say it was an experience to be had, and now that we've done it, we're pretty sure we could do it all over again! (Although, in a slightly more organised and calm manner I would hope)

Sadly, I didn't take many pictures myself, and left it to my sister to do, as quite honestly I was exhausted from the previous day AND evenings (late night) worth of labour. So please accept my apologies for the less the perfect quality of the photos, although hopefully you will be able to appreciate the workmanship and drool factor effect of the ones that were taken.

Here you can see my side of the stall. I ended up making 5 item types in total.
I focused on the desserts whilst my sister focused on the baked goods. I made them all in clear cups and in multi layers creating lovely layers of colour texture and flavour. I based them all on common desserts in a slightly different way, all of which were the result of my love for sweet and creamy desserts and a creative imagination.
They proved popular and created interest as they were seen as an unusual and amusing way to serve a dessert.

The back row were Choca Mocha Desserts, which were by far the most popular. This dessert was based on the lovely Tiramisu but without the alcohol.
Next row down were the Lemon Cream Crunch, (another favourite of mine) made with real cream, fresh lemons and lovely crunchy biscuit crumbs. Mouthwatering stuff!
The middle tray, were my homemade fruit pastry tartlets, filled with luscious cream, jam and fruit. Good little desserts.
The third row of cups were my Blackforest Surprise, a special favourite for strawberry lovers. It consists of a strawberry & cherry chunks, rich chocolate cake, homemade strawberry sauce and fresh cream.
Last by no way the least, were the fun Monkey Bizniz desserts. A magical twist on the Banoffee pie in a creamy dessert style, with fresh bananas and rich sticky caramel sauce! Yummy scrummy!

One more day to go...

You will probably think I (we're) crazy going on about this event on Saturday, but I'm getting really excited. Its going to be the first ever event I and my sister have baked for, let alone sold for! (*OMG!!!*)
So the past few days leading up to this Saturday has been a slightly hectic one to say the least.
We've been shopping almost everyday & getting my mum to bring ingredients and other bits and bob. No doubt we will be treating her for all the hassle we've put her through.
A couple of minor disasters have occurred too, some nearly ending up with tears, and others in hysterics..(the latter at my expense..HUH!)
My sis is doing the majority of the baking whilst I'm focusing on fresh creamy desserts.
By the way, this event is holding 200+ attendees not including kids.
My sister has been up since dawn baking, whilst I am having to wait last minute to make my desserts as they will all contain fresh dairy and fruit somewhere or another, which I don't want going off. So I've been fiddling about making little toppings, and sorts for my desserts, and so I'm getting itchy fingers as I just want to get cracking.
It is exactly as my mum put it, that we will (and have been) "living and breathing this whole event up until the day comes" and then when all is done we will finally be able to live normal lives again! hahaha! SO TRUE!

Our first Cake & Dessert Sale!

I have an announcement to make:
My sister and I will be holding our very first Cupcake and Dessert stall this coming Saturday!
Its going to be quite exciting and a little nerve racking. If you live locally that please pop in and have a taste of our delicious homemade Bakes, Cakes and yummy Desserts.
Of course, I will be taking many pictures and will eventually post them up for all to see.
If you have any ideas of cupcake flavours, desserts just drop me a message somehow!
So far, I have thought about making:
~Banoffee Dessert
~Tiramisu Dessert
~Chocolate Gateau Cupcakes
~Banoffee Cupcakes
(I personally L.O.V.E banoffee pie! which is why I want to make two banoffee flavoured items) it probably isn't a good idea to make two similar flavoured things as I'm sure there are other brilliant flavours that people love that I probably have never tried or thought of.
Please let me know what you like and normally go for, or if you have any special ideas I can make use of.

Malaysian Noodles (Bohen Goreng)

This noodle recipe is one of the most interesting and yet easy dishes to make. It was given by a lovely Malaysian friend of mine and I'm very grateful to her for this delicious recipe. I was particularly surprised at how few ingredients are needed, but still it can be turned into something quite special.
So a few weekends back, I wanted to make a dish for a little celebratory 'Hajj party' I was going to, and decided this would be it. Noodles are usually always a favourite amongst all people and cultures and its simplicity along with the ease of making the large quantity needed fit perfectly the occasion I was going to.

Enough said, here is how I made it...

Ingredients needed:
2 packets (8 portions) of dried Egg Noodles
1 large Chicken breast (1 1/2 cups boneless chicken) cut into very small cubes
2 medium Carrots, cut into small matchsticks
1 Green Pepper (any colour will do), sliced
1 Onion, sliced thickly
5 Spring Onions (green Onions), roughly chopped
2/3 tbls Tomato Ketchup
Oil (vegetable or Olive Oil)

For the Paste:
(a blender or liquidizer will be needed here. If not, a grater can be used to make this paste)
5 small onions (about 2 large)
8 Garlic cloves
1/2 tsp chilli powder
1 heaped tsp Salt

 How to make:
1. Begin by making the paste. Place all the ingredients for the paste into a blender, or food processor (or grate everything) and blend till a smooth consistency.
2. Meanwhile, heat about 4 tbls Oil in a large frying pan and cook chicken on a High heat till golden.
3. Pour the paste into the pan with the chicken and cook on a medium heat till the paste thickens and turns a golden colour. You may want to taste to check that the bitterness from the garlic has gone.
4. Add all the prepared vegetables (apart from the Spring Onions) and stir fry for 5 minutes. Water can be added, about 1/2 cup of water, to thin the paste if it has become very thick and sticky. Add the ketchup and stir through.
5. Meanwhile, prepare the noodles according to the packet instructions.
6. Finally, stir the noodles into chicken and vegetables and add the Spring Onions. Heat through gently before serving. You can garnish the noodles with a sprinkling of freshly chopped Spring Onions and fresh Coriander, if available.

'Whoopie Pie' experiment

This is our very special version of the famous American Whoopie Pie. Those who are familiar with the Whoopie Pie, than apologies for the lame attempt. However regardless of lack of identical-ness we nevertheless bravely with make the claim of indulgent deliciousness of our version.

If you are a common (cup)cake baker, then its dead simple. Simply make the cupcakes (whichever flavour you like) then make yourself a cream frosting (flavoured the way you want) and coat the top of one, and plunge another head first onto it......!! Couldn't be simpler!

As you can see I got carried away taking pics of these cakes! They looked so nice on the plate, the contrast of the chocolate cakes and white and choc frosting. They tasted good too.

Cupcakes, filled with Coffee/Choc frosting & Cream Cheese frosting

Extra frost was added to the tops

Drooling yet?

Our baking experimentation's will no doubt continue, so stayed tuned.

Cakes, Bakes, Sweets & Treats!

Here is a compilation of the baking that has taken place recently within our home. Most were made for events, both catering for adults and children.
The large round cake is a plain and chocolate marble cake with butter & fudge frosting, dark chocolate icing and walnuts. The mini cakes are plain with butter icing and fruit jelly & sprinkle decor. Everything we make is vegetarian and of course, delicious.
If you are interested in ordering cakes similar to these or you have a choice of flavour, you are more than welcome to contact us for details and pricing.
